Our campus cafeterias were the unsung heroes, the constant in a whirlwind of deadlines and discussions. And among the various "Theme Nights," Taco Tuesday always sparked a particular kind of anticipation.

You'd walk in, a hopeful glint in your eye, wondering which version of Taco Tuesday you'd encounter. Would it be the rare, glorious iteration with perfectly seasoned ground beef, vibrant salsa, crisp lettuce, and sturdy shells that actually held their contents? Or would it be the more common, wildly inconsistent version – mystery meat, soggy tortillas, watery salsa, and limp, sad-looking shredded cheese? The variance was legendary, a weekly culinary lottery that could swing from delightful surprise to utter disappointment.

These were the meals that fostered impromptu group therapy sessions over soggy tortillas, or celebrated mini-victories when the ingredients aligned. The mishaps, the midnight snacks cobbled together from leftover bits, even the outright culinary failures, became part of our shared lexicon.
